Anhui Ante Food, another significant player, is expanding its production capabilities to capture a larger share of the global market, focusing on cost-effective ingredient sourcing for the seitan and bakery industries.

This growth is driven by the increasing demand for plant-based diets, especially in the U.S. and Canada, where wheat gluten is a key ingredient due to its high protein content.

In the U.S., Hard Red Winter wheat and Hard Red Spring wheat contribute around 65% of the wheat output, both preferred for gluten due to their higher protein levels.
